🎾ㅃ is the first NFT artist and only #FOODPORNSTAR published in the iconic Food & Beverage Magazine (April 20, 2021 digital issue). Ennis collaborates with renowned chef David Gunawan to reinvent her favorite childhood snack – 인절미 (injeolmi - rice cakes) into a contemporary dessert. Her feeture includes a short essay on self-love/introducing Dave’s Dissertation, decadent 35mm photo editorial and QR code leading to a temporary digital installation titled Going Through Glory.
Ingredients
Rice Dough
- 200 grams 찹쌀가루 (Chapssalgaru – Korean sweet rice flour). Throw bag in freezer the night before. Starting with the sweet rice flour frozen preferred.
- 30 ml Water
Sweet Finish
- 100 grams Honey
- Rose & Lavender petals
- Cubeb or Long Pepper
- 인절미 (Injeolmi – Sweet Soybean Powder)
- Sesame oil
Steps
- Sift and mix flour with water thoroughly using fork
- Place dough in a steamer for 20 minutes
- Once out of the steamer, cool slightly until workable room temperature. Or try my grandma’s trick, wear knit gloves, put disposable plastic gloves on top, use elastics bands on your wrist, and drizzle lightly with sesame oil
- Knead on a well-oiled cutting board or bowl until it comes together. Roughly 5-6 minutes. It should be a sticky, chewy dough at this point.
- Cut dough in 3 and roll into index toe size log
- Cover tray with injeolmi and roll logs in powder
- Heat up honey until it comes to soft simmer
- Add flower petals and a crack of cubeb or long pepper and let steep
- Keep sauce warm while you cut your toe sized tteok logs into bite-sized pieces
- Drizzle honey sauce all over and enjoy

Going Through Glory can only be described as comedic digital architecture. A deceptively simple virtual exhibit where every user experience detail is geared for hilarity. 🎾ㅃ incorporates dissertation Easter eggs with poetry, sounds and 3D scans of physical paint flowers by artist Mike Reesé. Nested deep in the middle is a behind the scenes video of Recipe for Self-Lovers.
